  • In a large mixing bowl, combine the farmer's cheese, eggs, flour, sugar, vanilla extract and a pinch of salt. Mix well until everything is evenly combined and forms a smooth batter.
    500 g farmers cheese, 2 large eggs, 4 tbsp all-purpose flour, 2 tbsp sugar, 1/2 tsp vanilla extract, 1 pinch salt
  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with vegetable oil.

  • Take a spoonful of the batter and shape it into a small, round pancake, about 2-3 inches in diameter. Repeat with the remaining batter, placing the pancakes on the skillet, leaving some space between each.
  • Cook the Syrniki pancakes for about 3-4 minutes on each side, or until they are golden brown and cooked through. You may need to adjust the heat as necessary to prevent them from burning.
  • Once cooked, transfer the Syrniki pancakes to a plate lined with paper towels to absorb any excess oil.
  • Serve the pancakes warm, topped with a dollop of sour cream, a drizzle of honey, or your favourite jam.
