  • Heat the olive oil in a small saucepan over moderate heat and saute the bacon until almost crisp.
    2 tbsp olive oil, 6 rashers bacon
  • Deglaze the pan with the vinegar and season with salt and pepper.
    2 tbsp red wine vinegar, 1 pinch salt, 1 pinch ground pepper
  • Toss the greens with the dressing in a large bowl and arrange on individual serving plates.
    1/2 lb mild greens,
  • Place a poached egg on the salad and garnish with chopped chives.
    4 large eggs, 2 tbsp chives
