Instructions

Prepare the Burger Patties:

  • Place the beef mince into a large bowl. Add the salt, pepper, smoked paprika and garlic granules. Mix everything gently with clean hands until combined.
    800 g beef mince, 1 tsp salt, 1 tsp black pepper, 1 tsp smoked paprika, 1 tsp garlic granules
  • Divide the mixture into 8 equal portions. Shape each portion into a thin burger patty slightly larger than the buns. The burgers shrink slightly during cooking.
  • Place the patties into the fridge for 10 minutes while preparing the other ingredients.

Cook the Hash Browns:

  • Preheat the oven according to the packet instructions for the hash browns.
    4 medium hash browns
  • Place the hash browns onto a baking tray and cook until crisp and golden. Turn them halfway through cooking for even colour.

Prepare the Crispy Onions:

  • Place the sliced onion into a bowl and sprinkle over the flour. Toss well until lightly coated.
    1 large onion, 2 tbsp plain flour
  • Heat a shallow layer of oil in a frying pan over a medium heat. Fry the onions in batches until golden and crisp. This usually takes around 4 to 5 minutes.

  • Transfer the onions onto kitchen paper to remove excess oil.

Cook the Bacon:

  • Add the bacon slices to a hot frying pan. Cook until crisp on both sides. Remove and keep warm.

Make the Spicy Mayonnaise:

  • Mix the mayonnaise, sriracha, ketchup and smoked paprika in a small bowl until smooth.
    6 tbsp mayonnaise, 1 tsp sriracha sauce, 1 tsp tomato ketchup, ½ tsp smoked paprika

Cook the Burgers:

  • Heat a frying pan or griddle over a medium-high heat.
  • Cook the burger patties for around 3 to 4 minutes per side until browned and cooked through. Avoid pressing the burgers while cooking because this removes the juices.
    4 large sesame seed burger buns
  • Place a slice of cheddar onto each burger during the final minute of cooking. Allow the cheese to melt fully.
    8 slices mature cheddar cheese

Toast the Buns:

  • Slice the sesame buns in half and lightly toast them in a dry pan or under the grill for 1 to 2 minutes.

Build the Full Breakfast Burger:

  • Spread spicy mayonnaise onto the bottom half of each bun.
  • Add sliced pickles first. Place one cheesy burger on top followed by 2 slices of bacon and one hash brown.
    12 medium pickles
  • Add the second cheesy burger next. Top with the remaining bacon and a generous handful of crispy onions.
  • Finish with the sesame bun top.

Notes

Serving:
Serve immediately with potato wedges, baked beans, onion rings, or a simple tomato salad. A cold milkshake or hot coffee also works perfectly alongside this hearty breakfast burger.
