I have always enjoyed so when I was given the recipe, I was so happy. Roasted Red Pepper Sauce is full of a lovely deep heat without being burning. The colour is vibrant and the aroma is captivating. I serve this as a sauce over meatballs and stir fried vegetables and so much more. However my favourite is pan fried chicken on a bed of rice with this sauce drizzled over. The red peppers give the heat but I often add a sliced red chilli for that extra kick.

Ingredients
- Vegetable cooking spray
- 1 cup onion sliced
- 1 tsp garlic minced
- 1 jar roasted red peppers strained
- 1/2 tsp Salt
- 3/4 cup strained poaching liquid
Instructions
- In small non-stick skillet, sprayed with vegetable cooking spray, over medium heat, saute onions 2 to 3 minutes or until lightly browned. Add garlic and stir 30 seconds. Allow to cool for about 4-5 minutes.Vegetable cooking spray, 1 cup onion, 1 tsp garlic
- In food processor fitted with metal blade, puree onion mixture, peppers and salt. With motor running, slowly add poaching liquid to red pepper mixture until sauce is smooth.1 jar roasted red peppers, 1/2 tsp Salt, 3/4 cup strained poaching liquid
- Pour sauce into 2-cup glass measure and heat in microwave at HIGH (100% power) 30 seconds or until hot.
