If you are tired of standard muffins then here is the alternative. Spicy Fruit Muffins are absolutely gorgeous and perfect for breakfast/brunch and snacks. The combination of the walnuts, bran flakes and the spices gives a wonderfully deep flavour. These go so well with tea/coffee and juice. One of the best things is that they only take 25 minutes to prepare and cook. Time to put the kettle on, get the dog off the sofa, see what’s on tv and they’re ready.

  • Sift together flour, baking powder, salt and spices.
    2 cups flour, 3 tsp baking powder, 1 tsp Salt, 1/8 tsp cloves, 1/4 tsp nutmeg
  • Stir in apple, brown sugar and nuts.
    1 cup apple, 2/3 cup brown sugar, 1/2 cup walnuts
  • In a separate bowl, combine eggs, juice and butter. Stir into apple mixture just until blended.
    2 large eggs, 2/3 cup apple juice, 1/4 cup butter
  • Fold in bran flakes. Pour into oiled muffin pans, filling each cup about 2/3 full. Bake at 400 degrees for 15-20 minutes.
