A salad is not a salad without a dressing. A Vinaigrette Dressing is one of the simplest to produce but packs a smooth tasty additional flavour. The finely chopped shallots, Dijon mustard and red wine vinegar are a match made in heaven. The dressing is thick enough to give a lovely covering but thin enough to run into a salad. I normally whisk the mixture together or you can put them in a sealable jar and give them a good shake. When you have made you own vinaigrette dressing, you will never go back to those shop brought expensive ones.

Ingredients
- 1 tbsp shallot finely chopped
- 1 tsp Dijon mustard
- 1/4 cup red wine vinegar
- 3/4 cup Extra Virgin olive oil
- salt to taste
- ground pepper to taste
Instructions
- Combine the shallot, mustard, vinegar, salt, and pepper in a small mixing bowl and whisk until thoroughly combined.1 tbsp shallot, 1 tsp Dijon mustard, 1/4 cup red wine vinegar, salt, ground pepper
- Add the oil in a thin stream, whisking constantly.3/4 cup Extra Virgin olive oil
- If the sauce separates before being used it me be recombined by whisking vigorously for a few seconds.
