Carrot Bran Muffins

Carrot Bran Muffins are lovely snacks from America. The grated carrot mixed with bran, raisins and nuts creates such a superb flavour. These are one of my favourite muffins recipes along with Lemon Ginger Muffins, Blueberry Muffins  and Raspberry Muffins. Also this dish is excellent for picnics, snacks, treats and ideal for children with its healthier ingredients. I normally have Carrot Bran Muffins with a piping hot mug of coffee on the sofa. They only take 25 minutes to cook so not long to wait and the lovely aroma will fill your house. Even the children love this recipe and help with the prep.

  • In a large bowl, sift together flour, baking powder, baking soda, cinnamon, and salt. Stir in bran, carrots, raisins, and nuts.
  • In a separate bowl, beat honey, milk, oil, and eggs together.
  • Make a well in dry ingredients; pour liquid mixture in well, mixing until just moistened. Spoon into greased muffin tins, filling each two-thirds full.
  • Bake at 350 degrees for 20-25 minutes.
