Instructions

  • Dissolve the gelatin in 50ml of cold water and let it sit for about 5 minutes to bloom.
    1 sachet gelatine, 50 ml water
  • In a heatproof bowl, combine the egg whites, sugar, vanilla extract, and lemon juice.
    3 large egg whites, 200 g granulated sugar, 1 tbsp vanilla extract, 1 tbsp lemon juice
  • Place the bowl over a pot of simmering water, ensuring the bottom of the bowl does not touch the water.
  • Whisk continuously until the sugar has dissolved and the mixture reaches 70°C (use a kitchen thermometer for accuracy).
  • Remove from heat and continue to whisk until the mixture forms stiff peaks and has cooled to room temperature.
  • Warm the bloomed gelatin gently until fully melted and then slowly pour it into the marshmallow mixture, whisking constantly.
  • Transfer the marshmallow mixture into a piping bag fitted with a large round nozzle.
  • Pipe the mixture onto the wafers, creating a mound of marshmallow on each wafer.

  • Allow the piped marshmallow-topped wafers to set at room temperature for about 30 minutes or until they are firm to the touch.
  • Melt the chocolate and vegetable oil together in a microwave or a double boiler until smooth and glossy.
    300 g dark chocolate, 1 tbsp vegetable oil
  • Dip each marshmallow-topped wafer into the melted chocolate, ensuring it is fully coated.
  • Place the coated treats on a wire rack to allow the chocolate to set.
  • Let the Schokoschaumküsse sit at room temperature until the chocolate has fully set.

Notes

chokoschaumküsse can be enjoyed on their own as a delightful treat. They also make a great addition to dessert platters, can be used to decorate cakes, or served alongside coffee or tea for an indulgent snack.
