Eggs Stuffed with Smoked Salmon

Classic recipe for special occasions. Eggs Stuffed with Smoked Salmon has been used as a starter and as a  canapé both with great success. However I have also served this for breakfast and brunch. I like to serve the eggs and salmon slightly chilled with a peppermill nearby for that extra flavour. One additional ingredient I love to include is a finely slice red chilli for that little warm hit.

  • Remove the yolks from the eggs and mash with the remaining ingredients.
    12 in eggs, 1/2 cup smoked salmon, 3 tbsp mayonnaise, 2 tbsp dill, 2 tbsp capers, 1 tbsp lemon juice, salt
  • Fill the egg whites with the yolk mixture using a pastry bag or small spoon.
  • Serve chilled.
