Ingredients
- 3 large egg yolks
- 1/4 cup water
- 2 tbsp lemon juice
- 1/2 cup cold butter cut into 8 pieces
- 1/8 tsp paprika
- 1/8 tsp cayenne pepper
Instructions
- Prepare hollandaise sauce by heating egg yolks, water and lemon juice in a small saucepan.
- Cook over very low heat, stirring constantly, until yolk mixture begins to bubble at edges.
- Whisk in butter, 1 piece at a time, until melted and sauce is thickened.
- Stir in paprika and cayenne pepper. Season with salt to taste. Remove from heat.
