Honeyed Muesli Crunch is a homemade treat every day! This recipe is so easy to make in advance. Mix and match to make your favourite combinations. Low in saturated fat and salt, source of protein and Vitamin E. The honey makes this a perfect breakfast and brunch dish. While I try to use muesli, rolled oats as good and I have even thrown in a few crunched cornflakes for good measure.

Ingredients
- 250 g organic jumbo porridge oats
- 100 g wheatgerm
- 150 g seed mix
- 1/2 tsp cinnamon optional
- 100 ml runny honey
- 50 g pistachio nuts shelled
- 170 g dried cranberries cherries or raisins
- Rapeseed oil
Instructions
- Preheat oven to 160C, gas mark 4 and grease 2 baking trays with rapeseed oilRapeseed oil
- In a large bowl mix the oats, wheatgerm, seeds and cinnamon if using250 g organic jumbo porridge oats, 100 g wheatgerm, 150 g seed mix, 1/2 tsp cinnamon
- Pour the honey into a small saucepan and heat gently until thin and syrupy100 ml runny honey
- Drizzle over the oat mixture and mix well
- Divide the mixture between the 2 trays and bake for 15 minutes, stirring halfway through
- Remove and cool before adding the berries and nuts170 g dried cranberries, 50 g pistachio nuts
- Store in airtight containers for up to a month and serve for breakfast with milk and /or yogurt and some fresh fruit
Notes
You can use your own seed mix if you like. I use a combination of sunflower, pumpkin, sesame and flax seeds
