Squash and Apple Soup may not be your first combination but they work so well together. The squash is soft and slightly caramel whilst the apple is sweet in contrast. The flavour is superb and then I add the grated cheese. This melts slightly into the soup and marries everything together. Ideal as a starter, or soup course or as a lovely snack with dunking bread.

- 1 large butternut squash (3lb – 1.3 Kg) peeled and diced into inch cubes
- 2 large apples peeled, cored, and chopped
- 1 medium onion chopped
- 4 cups chicken stock 1 L
- 1 cup apple juice 250 ml
- 1/2 tsp dried thyme 2 ml
- salt to taste
- Swiss cheese Grated
