Marinated Cucumbers is a dish that is always great to serve as a snack and picnics. Because it is low in calories, you can offset some of the richer foods on the table by including it! Added too sandwiches, wraps and tortillas for a perfect addition.
I use this to spice up a turkey sandwich at Thanksgiving and Christmas. A couple of slices takes the sandwich to a new level without overpowering the turkey. Perfect and simple recipe for the holiday season.
Marinated Cucumbers

Ingredients
- 4 cups cucumber thinly sliced
- 1 large onion thinly sliced, and separated into rings
- 1 cup water
- 1 cup vinegar plain or flavored
- 1 tsp celery seed
- 1/2 tsp garlic powder or 1 tsp minced garlic
- 1/2 tsp Salt
Instructions
- If the cucumbers are waxed, peel them before slicing. If they are not waxed and are chemical-free, leave the skin on. With a fork, score the sides of each cucumber, creating a ruffled edge. Slice thinly.
- Layer the sliced cucumbers and onion in a large bowl.4 cups cucumber, 1 large onion
- Combine the remaining ingredients and blend thoroughly. Pour the dressing over the cucumbers.1 cup water, 1 cup vinegar, 1 tsp celery seed, 1/2 tsp garlic powder, 1/2 tsp Salt
- Cover and chill at least 2 hours. Use a slotted spoon to serve.
