One Bowl Chocolate Brownies is a recipe that I love. They are amazingly tasty and very little to wash up afterwards. Served as a cake or for snacks, they are perfect for lunch boxes and gifts. They also make a perfect dessert with a scoop of whipped cream or ice cream. This American recipe can be made in advance and kept in an airtight container.

  • Turn on your oven to 180C/350F/Gas Mark and allow to heat up.
  • Add the chocolate chips and butter to a glass mixing bowl (NOT metal) and place in the microwave for about 90 seconds on medium high. Remove from the microwave and allow to cool slightly before mixing.
  • When cooled, add the vanilla, salt (brings out the flavour in the chocolate) and both the white and brown sugars and whisk well to fully combined.
  • Crack the eggs into the mixture and whisk until thoroughly combined.
  • Next sift the cocoa powder and the flour into the mixture and yes you guessed int. Mix together. I use a soft flexible spatula for this part as you need to be gentle.
  • Add the remaining chocolate chips into the bowl and mix in for a little bit of gooeyness.
  • These quantities are perfect from a square 9-inch baking tray. Line the tray with parchment/greaseproof paper and lightly cover with non-stick spray.
  • Pour the brownie mixture into the tray and using the spatula make sure nothing is left behind in the bowl.
  • Place in the oven and bake for 35 – 40 minutes.
  • To test whether the brownies are cooked, pierce with a skewer or cocktail stick. If it comes out virtually clean.
  • Remove from the oven and allow to cool fully.
  • Slice up and remove from the tray and enjoy.
