  • Pour the flour into a shallow bowl and season well with the salt and pepper.
    3 tbsp plain flour, salt, pepper
  • Place a frying pan over a high heat and add the butter and the oil.
    15 g butter, ½ tbsp olive oil
  • Put the Plaice into the seasoned flour and coat both side well. Shake off any excess.
    2 large plaice
  • When the butter is foaming carefully add the plaice to the pan skin side up and fry until golden. About 4 minutes.
  • Flip the Plaice over and cook for a further 4 minutes until cooked through.
  • Serve hot with a wedge of lemon, sprigs of dill and the chopped parsley.
