Potato and Salmon Bisque is such a simple recipe that results in a lovely dish that can be both a starter and a soup course. Whilst not a norm with a lot of home cook, this recipe uses the microwave to its best use.  It is fast, efficient and save so much time for those in a rush or with mouths to feed.  You can use vegetable stock instead of chicken to make this vegetarian Potato and Salmon Bisque. Using lemon peel, green onions and red peppers gives this dish texture and crunch without drowning the salmon. This is simply a lovely warming comfort food for anytime of the year.

  • In microwave-safe 2-quart casserole combine salmon, broth, milk, green onions, red pepper, lemon peel and pepper.
  • Cover loosely with plastic wrap; cook on High 5 to 6 minutes or until very hot.
  • Stir in potatoes.
  • Re-cover; let stand 5 minutes. Cook on High
  • 2 minutes if necessary to reheat
