Ingredients
- 1 cup sugar
- 2 tbsp ginger chopped
- 1 whole lemon zest only
- 8 tbsp unsalted butter
- 2 large eggs
- 1 cup buttermilk yogurt
- 2 cups flour all purpose
- 1 tsp baking soda
Instructions
- Combine the sugar, ginger, and lemon zest in an electric food processor and process until the ginger and zest are finely ground.1 cup sugar, 2 tbsp ginger, 1 whole lemon
- Add the butter and process until creamy and smooth.8 tbsp unsalted butter
- Add the eggs, process, scrape down the sides of the bowl, and process again until smooth.2 large eggs
- Sieve the flour and baking soda to remove any lumps.2 cups flour, 1 tsp baking soda
- Transfer to a mixing bowl and stir in the buttermilk and the flour mixture.1 cup buttermilk
- Pour into greased and floured muffin pans and bake in a preheated 400F (200C) oven for 20 to 25 minutes.
