This homemade Tomato Relish is so simple but so much better than shop brought. This relish is ideal to spice up sandwiches, burgers, lunches and so many other dishes. Whilst this recipe states to chop the tomatoes, you can put all of the ingredients into a blender for a smoother texture. However, when serving as a side dish with Apricot Baked Ham for example, the chunkier version has a bigger impact. When seving in a sandwich, smoother is better. You can adjust the taste to suit you. Ingredients
- 2 medium tomatoes chopped
- 1 tbsp celery leaves 15 ml, finely chop
- 1 tbsp basil 15 ml, finely chop
- 2 tbsp Extra Virgin olive oil 30 ml
- 1 tbsp balsamic 15 ml
- 1/2 tsp sugar or more to taste, 2 ml
- salt to taste
- ground pepper to taste
Instructions
- Combine all ingredients in a bowl and stir to combine.
- Serve chilled.
