Sausage, Broccoli and Rice Casserole is a colourful, tasty and aromatic main dish that is always welcome at the table. This is a simple recipe mixing three great ingredients – meat, vegetables and rice. The Italian Sausage is seasoned with Fennel and contains pork and is absolutely gorgeous especially when cooked with the smoked bacon. Sausage, Broccoli, and Rice Casserole
- Cook the bacon and sausage meat in a large, heavy pot with a cover (Dutch oven) over moderate heat until the bacon is crisp and the meat is browned, about 10 minutes.
- Drain off excess fat.
- Stir in the rice and add the stock, salt, and pepper.
- Bake covered in a preheated 375F (190C) oven for 30 minutes.
- Stir in the broccoli and bake covered until the rice is tender and the liquid is absorbed, about 20 minutes.
