Everybody loves a plate of quick meatballs. However, not many people know how easy and quick it is to produce high quality tasty meatballs every time. Another benefit is I make mine a day in advance and put them in the fridge overnight. This helps the ingredients to absorb each others flavours. In addition, I have days where I batch cook. This means that my freezer never runs out of meatballs and my children and grandchildren are never hungry. Almost ever time I cook these, my grandchildren help with the mixing and rolling the meat into balls. It has become a family event.
Quick Meatballs
A superb recipe to make quick meatballs for unexpected visitors. Served on a bed of rice or spaghetti for a simple but amazing meal.

Ingredients
The Meatballs
- 2 lb ground beef
- 2 tbsp onion peel/mince
- 1 cup cornflakes crushed
- 2 large eggs free range
- 1 tbsp parmesan grated
- 1 tsp salt to taste
- 1 pinch pepper to taste
- 2 tbsp Worcestershire Sauce
The Sauce
- 1 can cranberry sauce
- 1/2 cup brown sugar
- 2 tbsp lemon juice
- 3 tsp chili sauce to taste
Instructions
- To make the meatballs. mix well and roll into small meatballs.
- Melt cranberry sauce on low.
- Add remaining ingredients.
- Pour over meatballs.
- Bake at 350° for 45 minutes to 1 hour.
