  • Cut wraps into halves ready to make into pockets for the healthy samosa.
    6 mini tortilla wraps
  • Spray oil into the pan on medium heat and roast cumin seeds.
    Spray oil, 2 tsp cumin seeds
  • Add and sauté the onions, garlic and ginger until soft.
    2 medium onions, 2 cloves garlic, 1 tbsp fresh ginger
  • Add cubed sweet potatoes (cut to the size of a pea) and mixed vegetables.
    1 large sweet potato, 750 g mixed vegetables
  • Season with garam masala, turmeric, sesame seeds and chilli flakes. Cover and cook on medium heat (add a splash of water so the mixture doesn’t dry and helps softens the vegetables) for about 20 minutes or until soft.
    1 pinch garam masala, 1 pinch turmeric, 1 pinch sesame seeds, 1 pinch chilli flakes
  • Add the lemon juice, sprinkle with the fresh coriander and allow the mix to cool.
    1/2 medium lemon, 1 tbsp coriander
  • Use a little bit of water to seal the straight cut side of your wrap “pockets”. You can add a little plain flour and mix with the water until you get a glue like consistency.
    1 tbsp water
  • Fill with the cooled vegetable mixture and seal the curved side of the pocket.
  • Refrigerate for 30 minutes to allow the pockets to seal.
  • Bake in the oven until golden
