Ingredients
- 1 tbsp butter unsalted
- 1 tbsp all-purpose flour
- 1 large egg yolk
- 1 cup heavy cream See note
- 6 slices white bread crust removed
- 1/2 lb crab meat See Note
- 1 tbsp dry Sherry
- 1 tbsp dill chopped
- salt to taste
- ground pepper to taste
Instructions
- Heat the butter in a small saucepan over moderate heat and stir in the flour.1 tbsp butter, 1 tbsp all-purpose flour
- Cook, stirring constantly, for 3 minutes.
- Whisk together the egg yolk and the cream.1 large egg yolk, 1 cup heavy cream
- Remove the butter mixture from the heat and stir in the cream mixture.
- Whisk over low heat until thickened-do not boil.
- Toast the bread on one side under a hot broiler and cut each slice into quarters.6 slices white bread
- Mound the crab mixture on the untoasted side of the pieces of bread.
- These may be prepared in advance to this point and refrigerated.
- Immediately before serving, heat under a preheated broiler until hot and lightly browned, about 1 minute.

Notes:
- Ideally the crab should be fresh but if unavailable then canned, or frozen crab meat can be used. Make sure you pick through it to ensure no shell remains.
- Heavy cream is the best option but if you prefer, half and half or milk can be used.
