Batagor

Batagor, an abbreviation of “Bakso Tahu Goreng,” is a typical Indonesian street food. It’s amazing flavor has captured the hearts and palates of many both locals and tourists. Originating from Bandung, a city generally renowned for its culinary innovations. Batagor is a delicious and savory snack that showcases the rich and diverse flavors of Indonesian cuisine.
What is Batagor?
At its core, Batagor consists of fried dumplings made from a mixture of fish paste (typically mackerel), and tofu. The process starts with the fish paste being seasoned and then stuffed into tofu or wrapped in wonton skins. These are then deep-fried until they achieve a golden-brown, crispy exterior. The texture is an appealing contrast between the crunchy outer layer and the soft, savory filling inside.
The Unique Flavor Profile
Batagor’s flavor is enhanced by the inclusion of various spices and seasonings, part of Indonesia’s rich spice heritage. Ingredients like garlic, shallots, coriander, and sometimes even a hint of turmeric are mixed into the fish paste, giving it a distinct and aromatic flavor. The final touch is a generous drizzle of peanut sauce, which is both sweet and savory, often spiced up with a hint of chili for those who prefer a bit of heat.
How to Serve Batagor
Traditionally, Batagor is served cut into bite-sized pieces and drenched in peanut sauce. However, several accompaniments can elevate this already delectable dish:
Lime Wedges: A squeeze of fresh lime juice over Batagor adds a zesty tang. This balances the richness of the peanut sauce and the fried dumplings.
Sweet Soy Sauce (Kecap Manis): This thick, syrupy soy sauce provides a sweet and slightly salty complement to the savory flavors of Batagor.
Chili Sauce: For those who love spicy food, a side of sambal (Indonesian chili paste). However a splash of hot chili sauce can provide an extra kick.
Pickled Vegetables (Acar): Acar, a type of Indonesian pickle made from cucumbers, carrots, and shallots, adds a refreshing crunch and acidity that cuts through the dish’s richness.
Fried Shallots: Sprinkling crispy fried shallots over the top adds a delightful crunch and an additional layer of flavor.
Pairing Batagor with Beverages
Choosing the right beverage can enhance your Batagor experience. Traditional Indonesian drinks like es teh manis (sweet iced tea) or es jeruk (iced citrus drink) are excellent choices. The sweetness and acidity of these drinks complement the savory and rich nature of Batagor, providing a refreshing contrast.
Batagor is more than just a snack; it is a culinary experience that encapsulates the essence of Indonesian street food. Its unique blend of textures and flavors, combined with the richness of its accompaniments, makes it a must-try for anyone exploring the vibrant food culture of Indonesia. Accordingly, this can be enjoyed as a snack or a part of a larger meal, Batagor is sure to leave a lasting impression on your taste buds.

I have always loved Asian recipes and tried this last night. Took out the tofu and add a little cooked chicken. Moist and succulent.
