Ingredients
The Burrito Filling:
- 500 g ground beef
- 1 large onion finely chopped
- 2 cloves garlic minced
- 1 large bell pepper diced
- 1 cup cooked rice
- 400 g black beans drained and rinsed
- 1 packet taco seasoning
- 1 tbsp olive oil
- salt to taste
- pepper to taste
The Burritos:
- 4 large flour tortillas
- 200 g cheddar grated or Monterey Jack cheese
For the Sauce:
- 400 g tomato sauce
- 1 tsp cumin
- 1 tsp paprika
- salt too taste
- pepper to taste
For the Salad:
The Guacamole:
- 2 large ripe avocados
- 1 large lime juice only
- salt to taste
Topping:
- 4 tbsp salsa or hot sauce optional
Instructions
- Heat the olive oil in a large pan over medium heat. Add the chopped onion and garlic, sauté for 2 minutes. Add the ground beef and cook until browned.500 g ground beef, 1 large onion, 2 cloves garlic, 1 tbsp olive oil

- Spoon the beef mixture into the centre of each tortilla. Fold the sides, then roll them up. Place them seam-side down in an ovenproof dish.4 large flour tortillas
- Preheat the oven to 180°C (350°F). In a bowl, mix the tomato sauce with cumin, paprika, salt, and pepper. Pour the sauce over the burritos and sprinkle the grated cheese on top.400 g tomato sauce, 1 tsp cumin, 1 tsp paprika, salt, pepper, 200 g cheddar
- Place the burritos in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
