  • 4 tbsp salsa or hot sauce optional

Instructions

  • Heat the olive oil in a large pan over medium heat. Add the chopped onion and garlic, sauté for 2 minutes. Add the ground beef and cook until browned.

  • Stir in the bell pepper, rice, beans and taco seasoning. Cook for another 5 minutes. Season with salt and pepper. Remove from heat.

  • Spoon the beef mixture into the centre of each tortilla. Fold the sides, then roll them up. Place them seam-side down in an ovenproof dish.

  • Preheat the oven to 180°C (350°F). In a bowl, mix the tomato sauce with cumin, paprika, salt, and pepper. Pour the sauce over the burritos and sprinkle the grated cheese on top.

  • Place the burritos in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
  • In a bowl, combine the lettuce, tomato, and onion. Drizzle with olive oil and lime juice. Toss and season with salt and pepper.

  • Mash the avocados in a bowl. Add lime juice and salt. Mix well. Taste and adjust seasoning if needed.
