Carpaccio is a lovely Italian dish of finely sliced fillet of beef normally served as a starter. The slices of beef are served raw and have an amazing flavour on its own. However add the capers, arugula and sliced shallots the flavour is magnified. Then add a squeeze of lemon and a shaving of parmesan and you have a perfectly balanced dish.

Ingredients
- 1/2 lb beef fillet filet mignon
- 3 tbsp capers drained
- 3 tbsp scallion finely chopped
- 1 bunch arugala
- 30 g Parmesan shaved
- 1 large lemon wedges
- 1 pinch Salt to taste
- 1 pinch ground pepper to taste
- Extra-virgin olive oil to taste
Instructions
- Wrap the beef tightly in plastic wrap and place in the freezer until very firm and almost frozen, about 1 hour.1/2 lb beef fillet
- Slice as thinly as possible with a very sharp knife.
- The slices should be almost transparent, so flatten them by pounding them gently if you aren’t able to slice them thinly enough.
- Arrange the slices on serving plates and drizzle lightly with olive oil.Extra-virgin olive oil
- Add the arugula on the beef.1 bunch arugala
