Clafoutis

Clafoutis is a lovely and simple recipe for a sponge that tastes amazing. The sponge base is light and airy while the cherries, having been cooked in the mixture adds sweetness and colour. Serve as a dessert, snack and as a main dish with cream, ice cream or evaporated milk.

  • Use the butter to grease a 9 inch (approx 25 cm) pie pan.
    1 tsp unsalted butter
  • In a bowl beat the egg yolk and mix in the apple sauce, salt, sugar, flour, milk, and almond extract.
    1 large egg yolk, 1/2 cup apple sauce, 1/4 cup sugar, 1/4 cup all-purpose flour, 1/4 cup non-fat milk, 1/2 tsp almond extract, salt
  • In another bowl beat the egg whites and the salt until stiff but not dry.

  • Fold the egg whites into the applesauce mixture and pour into the prepared pie pan.
  • Drop the cherries into the batter-do not press down.
    2 cups pitted cherries
  • Bake in a 350F (180C) oven for 20 minutes, until the clafoutis is golden and puffy, and a toothpick inserted in the center comes out clean.

Notes
