Cream of Clam Soup for 4 people that can be made in less than 15 minutes is a dream. This recipe is fast, easy yet produces a superb soup with flavours that go on and on. The addition of Heavy or half and half cream creates a soup mixed with the clam liquid for a superb flavour. Hit with a pinch of paprika and da-da you have a perfect dish.  I serve Garlic Bread (home made) or Fresh Bread (also home made) to help with the dunking and mopping up of the soup. This is one of the few dishes I would consider licking the soup bowl to make sure I get every last bit.

  • Combine the butter, clam juice, clams, cream, and milk in a saucepan and bring almost to a boil over moderate heat.
  • Season with salt and pepper and serve garnished with a sprinkle of paprika.

The picture shows whole clams being used which is more traditional and in my view tastier.
