Eggs in Green Sauce may sound strange but the flavour is amazing and its really simple to prepare. The green sauce is sour cream, mayonnaise and yogurt mixed with the herbs. I like to use either coriander or parsley for their aroma and flavour. Also they are not a dominating herbs such as basil. Serve as a side dish or as a main. Simply add boiled potatoes and you have a lovely filling dish ready in less than 20 minutes.

Ingredients
- 10 large eggs boiled
- 1 1/2 cups herbs chopped
- 1/2 cup sour cream
- 1/2 cup yogurt
- 1/4 cup mayonnaise
- 1 large lemon juice only
- 1/2 tsp sugar
- 1 pinch Salt to taste
- 1 pinch ground pepper to taste
Instructions
- Combine the sour cream, yogurt, mayonnaise, and lemon juice.1/2 cup sour cream, 1/2 cup yogurt, 1/4 cup mayonnaise, 1 large lemon
- Finely chop one of the eggs and stir it into the mixture, along with the herbs, sugar, salt, and pepper.1 1/2 cups herbs, 1/2 tsp sugar, 1 pinch Salt, 1 pinch ground pepper
- Spoon the sauce onto a serving platter or individual plates.
- Slice the remaining eggs in half and arrange them on the sauce.10 large eggs
