Indian Cauliflower with Scallions is an amazing Indian recipe that adds colour, flavour and aroma to any menu. Even if you don’t like cauliflower, you will love this dish. This is a tasty side dish that fits is full of flavour and the yellow Mustard seeds give the dish a superb colour. Serve with Chicken Tikka, Aromatic, Aromatic Pilau Rice, Indian Curried Potatoes and Peas (Alu Mattar) and Lamb Coconut Curry. This is my favourite menu as all of the flavours go so well together and the colours are amazing. The scallions (Spring Onions) add a subtle onion flavour without complicating the dish.
Indian Cauliflower with Scallions is one of my favourites and takes no effort to prepare. One of the easiest Indian recipes I know and goes well with so many dishes or just with rice for a quick dish.
Indian Cauliflower with Scallions
Ingredients
- 3 tbsp vegetable oil 45 ml
- 1/2 tsp mustard seeds 2 ml
- 1/2 tsp turmeric 2 ml
- 1/4 tsp cayenne pepper or to taste, 1 ml
- 12 large scallions sliced
- 1 medium cauliflower small florets
- 1/4 cup water 60 ml
- salt to taste
Instructions
- Heat the oil in a large skillet over high heat until very hot.3 tbsp vegetable oil
- Add the mustard seeds and saute for 15 seconds, covering the skillet to avoid splatters of hot oil from the popping of the seeds.1/2 tsp mustard seeds
- Add the turmeric, cayenne, and scallions, stirring for 15 seconds.
- Add the cauliflower and water and stir to combine.1 medium cauliflower, 1/4 cup water
- Reduce the heat to low and simmer covered until the cauliflower is tender, about 15 to 20 minutes.
- Remove the lid and increase the heat to medium, stirring constantly until all of the liquid has evaporated and the cauliflower is lightly browned. Taste and add seasoning if required.salt
- Serve immediately.
