Sautéed Broccoli or Broccoli Saltati is a divine side dish may takes minutes but is a wealth of flavours. The inclusion of anchovies adds a mild almost subtle background flavour and aroma to the broccoli without being strong. It is a lovely gentle touch. While this is a tasty vegetarian dish, I have added fried bacon for a meatier version. Either way it is gorgeous.

Splendid vegetarian dish that clean and tasty with the perfume of the anchovy.

Ingredients
- 1 lb broccoli
- 2 tbsp balsamic
- 3 large anchovy fillets mashed
- 3 tbsp Extra Virgin olive oil
- 2 cloves garlic peel/thinly sliced
- salt to taste
- ground pepper to taste
Instructions
- Cut the broccoli into florets and peel and slice the stem.1 lb broccoli
- Heat the oil in a large deep skillet over moderate heat and add the broccoli, garlic, salt, and pepper.2 cloves garlic, salt, ground pepper, 3 tbsp Extra Virgin olive oil
- Saute 6 to 8 minutes, stirring frequently, until the broccoli is tender but crisp.
- Add the vinegar and anchovies and serve immediately.3 large anchovy fillets, 2 tbsp balsamic
Notes
I often include fried bacon for a meatier version otherwise this is an easy vegetarian recipe. Either way it is gorgeous.
Instead of using Balsamic you can use red wine vinegar.
