  • Heat the butter and olive oil in a large skillet over high heat.
    2 tbsp butter, 1 tbsp Extra Virgin olive oil
  • Saute the shallots until tender but not brown, about 5 minutes.
    2 large shallots
  • Add the shrimp and saute for 1 minute.
    1 1/2 lbs large shrimp
  • Add the tequila and cook for 30 seconds.
    3 tbsp tequila
  • Add the cream, tomato, salt, and pepper and saute until the sauce thickens slightly and the shrimp are firm and opaque, 3 to 5 minutes.
    1/2 cup heavy cream, 1 medium tomato, salt, ground pepper
  • Serve garnished with chopped chives.
    1 bunch chives
