Ingredients
- 2 tbsp butter
- 1 tbsp Extra Virgin olive oil
- 2 large shallots finely chopped
- 1 1/2 lbs large shrimp peeled and deveined
- 3 tbsp tequila
- 1/2 cup heavy cream
- 1 medium tomato seeded and chopped
- 1 bunch chives Chopped for garnish
- salt to taste
- ground pepper to taste
Instructions
- Heat the butter and olive oil in a large skillet over high heat.2 tbsp butter, 1 tbsp Extra Virgin olive oil
- Saute the shallots until tender but not brown, about 5 minutes.2 large shallots
- Add the shrimp and saute for 1 minute.1 1/2 lbs large shrimp
- Add the tequila and cook for 30 seconds.3 tbsp tequila
- Add the cream, tomato, salt, and pepper and saute until the sauce thickens slightly and the shrimp are firm and opaque, 3 to 5 minutes.1/2 cup heavy cream, 1 medium tomato, salt, ground pepper
