Tomato Brunch

Tomato Brunch is one of those simple dishes that proves you do not need a long list of ingredients to create something full of flavour. It is quick to prepare, easy to cook and perfect for those relaxed mornings when you want something warm and satisfying without spending ages in the kitchen. I often turn to this dish when I need a fast brunch or a light snack during the weekend.

The combination of crisp bacon, juicy tomatoes, and soft rolls works beautifully together. Each ingredient brings something different to the plate. The bacon adds a rich savoury flavour, while the tomatoes provide freshness and a slight sweetness. The balsamic vinegar ties everything together with a gentle tang that lifts the whole dish.

One of my favourite parts of Tomato Brunch is the way the tomatoes are cooked. Pan frying them in the rendered bacon fat gives them so much extra flavour. The tomatoes soften slightly as they cook, yet they still keep their shape and texture. They soak up the smoky bacon juices and become wonderfully rich without feeling too heavy. A light drizzle of balsamic vinegar at the end adds just enough sharpness to balance the dish.

The tomato rolls are also an important part of the meal. Once sliced in half, they create the perfect base for the toppings. The rolls absorb some of the delicious juices from the tomatoes and bacon, which makes every bite even better. You can serve them lightly toasted if you enjoy a little crunch, although they are just as tasty served soft and warm.

I think this dish is ideal for busy mornings because it comes together very quickly. You can easily prepare it before work, or serve it as part of a relaxed weekend brunch with coffee or fresh juice. It also works well as a light lunch or an afternoon snack when you want something comforting but uncomplicated.

Another reason I enjoy Tomato Brunch is how flexible it can be. You could add fresh herbs such as basil or chives for extra colour and flavour. A little cracked black pepper also works nicely with the sweetness of the balsamic vinegar. Some people may even enjoy a sprinkle of cheese melted over the top for a richer finish.

Simple dishes often become the most memorable, and Tomato Brunch is a perfect example of that. It is warm, tasty, and full of comforting flavours that work together effortlessly. Best of all, it feels homemade and welcoming, which is exactly what a good brunch dish should be.

Instructions

  • Slice the tomato rolls in half and set them aside. You can lightly butter them if you like extra richness.
    6 medium tomatoes
  • Place a frying pan over medium heat. Add the bacon rashers and cook until crisp and golden. Turn them occasionally so they cook evenly.
    4 rashers smoked bacon
  • Remove the cooked bacon from the pan and place it onto kitchen paper. Leave the bacon fat in the pan because this will flavour the tomatoes beautifully.
  • Slice or roughly chop the bacon into bite-sized pieces once it has cooled slightly.
  • Add the sliced tomatoes to the hot pan with a sprinkle of salt o bring out the flavour. Cook them gently in the bacon fat for several minutes. The tomatoes should soften slightly while still holding their shape.
  • Drizzle the balsamic vinegar over the tomatoes during the final minute of cooking. Allow it to bubble gently and coat the tomatoes.
    2 tablespoon balsamic vinegar
  • Place the roll halves onto serving plates. (Toast the rolls if you want) Spoon the warm tomatoes over the rolls and taste the tomatoes to check if more salt is required.
