This is a traditional old British recipe that has been popular for decades if not longer. As breakfast and brunch dish. The simple ingredients of egg, bread, mayonnaise and cheese makes Boiled Egg with Cheese Soldiers, a filling and very tasty dish. This is one of those recipes that all generations enjoy.
Boiled Eggs with Cheese Soldiers is a simple, comforting dish that brings a playful twist to the classic breakfast of boiled eggs with toast. The combination of creamy soft-boiled eggs and crunchy cheese-topped toast, or “soldiers,” makes for a satisfying and nutritious start to the day.
The dish begins with perfectly boiled eggs, cooked just long enough for the whites to set but the yolks to remain deliciously runny. The eggs are served in their shells, inviting you to tap the top off and dip your crispy toast soldiers into the golden centre.
What sets this version apart is the addition of cheese to the soldiers. I like to use either or a combination of cheddar and Red Leicester, a mild and slightly nutty hard cheese, is grated and sprinkled over freshly toasted wholemeal bread. The cheese melts slightly into the toast, creating a savoury contrast to the richness of the eggs. A touch of low-fat mayonnaise adds creaminess without overpowering the natural flavours, while a scattering of fresh cress provides a peppery bite.
The wholemeal bread gives a satisfying crunch, and its nutty flavour complements the tangy cheese. The soldiers are cut into thin strips, perfect for dipping into the yolk of the eggs, creating a satisfying balance of textures.
Boiled Eggs with Cheese Soldiers is not only a comforting breakfast but also a great source of protein and fibre, making it both indulgent and nutritious. It’s a dish that feels nostalgic yet fresh, and the addition of cheese elevates the humble boiled egg into something just a bit more special.

This is what Brunch was created for. This simple dish is amazing and so quaint it’s perfect.
This has quickly become a new favourite breakfast of mine
I love how the cheese melts onto the toast, making it so tasty to dip into the eggs. Definitely a winner
I made this for a relaxed weekend breakfast, and it was a hit. The texture of the wholemeal toast with the slightly melted cheese is divine, and the soft-boiled eggs are perfect for dipping.
If you enjoy cheese like I do, you’ll love this! The Red Leicester/chedar mix melts slightly on the toast and pairs so well with the soft-boiled eggs.
This is such an easy dish to prepare, but it feels quite special. The cress and mayonnaise give a nice balance to the richness of the eggs and cheese.
Boiled eggs with soldiers always takes me back to my childhood, but the addition of cheese gives it a grown-up spin. The yolk and melted cheese together are a match made in heaven.
I was looking for something a bit more exciting than plain eggs on toast, and this dish did not disappoint. It feels indulgent but is actually quite healthy.
’ve always loved boiled eggs with toast soldiers, but the cheese addition takes it to a whole new level. The Red Leicester melts perfectly onto the toast, and dipping the cheesy strips into the runny yolk is so satisfying.
This dish is a great way to begin the morning. The eggs were cooked perfectly, and the cheese soldiers added an extra layer of flavour. The cress was a nice touch too
The wholemeal toast and fresh cress make it a wholesome meal, and the cheese adds just the right amount of richness. Love it.
