Baked Fruit Compote is a sauce recipe most people forget about. However once you try the recipe, it becomes a frequent visitor being used on pancakes, ice creams, desserts etc. Not to forget adding to yoghurts, scones, French toast and cheese boards. This is such a simple recipe that improves so many other recipes/dishes.

Baked Fruit Compote
One of my favourite desserts and suitable regardless of the weather. The fresh fruit finishes a meal with class.

Ingredients
- 12 small peaches cored, peeled and quartered, see Notes
- 1/2 cup berries fresh assorted in season choice
- 2/3 cup red wine
- 2/3 cup sugar
- 1/2 large lemon or lime thinly sliced and seeded
- 1 stick cinnamon
- 3 whole cloves
- 1/4 tsp salt
- 1 whole star anise optional
- 6 whole black peppercorns optional
Instructions
- Place the fruit in a baking dish.12 small peaches, 1/2 cup berries
- Combine the remaining ingredients in a saucepan and heat until the sugar is dissolved-do not boil.2/3 cup red wine, 2/3 cup sugar, 1/2 large lemon, 1 stick cinnamon, 3 whole cloves, 1/4 tsp salt, 1 whole star anise, 6 whole black peppercorns
- Preheat your oven to 350F (180C)
- Pour the liquid over the fruit and bake covered in the oven until the fruit is tender, 20 to 40 minutes, depending on the ripeness of the fruit.
- Remove the star anise, cinnamon, cloves etc
- Serve warm, chilled, or at room temperature.
Notes
Note: Makes sure you count how many star anise, cloves etc you use so you know how many to remove.
Note: you can use other fruit such as apples and pears
