Beef and Pak Choi Stir Fry

Beef and Pak Choi Stir Fry is a Korean dish I was introduced to about 25 years ago. It is still my favourite and hope you will also enjoy it. I buy large pre cooked and sliced chestnuts in a tin but pine nuts and pistachios work just as well. Served normally as a main dish but could be a side dish for 4 people. If you don’t have any noodles then serve on a bed on boiled rice.

  • In a small mixing bowl, add the oyster sauce and toasted sesame oil and the sweet chilli sauce and mix well.
    2 tbsp Oyster Sauce, ½ tsp toasted sesame oil, ½ tbsp sweet chilli sauce
  • Place a wok or high sided frying pan over a high heat and add a little groundnut oil.
    1 tbsp groundnut oil
  • When piping hot add the sliced chestnuts and stir fry until golden, normally about 2-3 Minutes). When brown remove from the wok and put to one side.
    125 g chestnuts
  • Add a little more groundnut oil to the wok and add the beef stirring it constantly until browned all over. (3 – 5 minute)
    250 g beef
  • Add the garlic, onion, red chilli, mange tout and pak choi and stir fry for about 2 – 3 minutes.
    1 medium red onion, 2 cloves garlic, 1 small ginger, 1 large red chilli, 200 g Pak choi, 75 g mange tout
  • Add the sauce you made at the start to the wok, stir in and fry for further minute.
  • Ad the noodles and cook for 1 – 2 more minutes to fully cook through.
    100 g egg noodles
  • Serve into warmed dishes with boiled rice or noodles.
