How many of us have had a breakfast , gone to work with breakfast being a distant if not forgotten memory. Have a Breakfast Omelette and you will not forget it. I have added sliced sausages and also thinly sliced red and green bell peppers, cherry tomatoes to add texture.

Ingredients
- 2 medium eggs free range
- 1 tsp iced water
- 1 rasher smoked back bacon
- 1 medium tomato sliced
- 2 large mushrooms finely sliced
- 1 pinch Salt to taste
- 1 pinch Pepper to taste
- 1 tsp vegetable oil
Instructions
- Beat the eggs in a bowl with the iced water and season
- Brush the omelette pan lightly with oil ensuring you cover to the rim and preheat the pan
- Meanwhile preheat the grill
- Once the pan is hot, pour in the egg mix and with a fork start to scramble the egg lightly
- Turn down the heat and spread egg mix smoothly to form an omelette
- The egg does not need to be cooked thoroughly at this stage
- Place the remaining ingredients on top of the egg mix and put under the hot grill until cooked
- The omelette mix will puff up around the filling
- Remove from the grill and with a palette knife or an egg slice, loosen the edges, fold in half
