Blue cheese is not just a cheese. It is a wide range of cheeses made with the addition of cultures of edible moulds. These vary which create blue-green spots or veins through the cheese hence the phrase blue cheese. These cheeses also vary in taste from very mild to strong and from the slightly sweet to salty or sharp. they also vary in consistency from soft through to hard. Mny also have a distinctive smell caused by the mould or from various specially cultivated bacteria added intentionally. Examples include Stilton, Cambazola, Roquefort and Gorgonzola.
