Ingredients
- 1 1/2 lbs beef tenderloin
- 1 cup rocket leaves chopped,250 ml,
- 1/4 cup parsley chopped, 60 ml
- 1/3 cup Extra Virgin olive oil 80 ml
- 1 large lemon 15 ml, juice only
- 1 pinch Salt to taste
- 1 pinch ground black pepper to taste
Instructions
- Combine all the ingredients in a bowl and toss to combine.
- Serve immediately.
