Potato Croquettes are delicious appetizers, canapes and a side dish. I like to mix in cheddar cheese for that extra flavour and soft texture. All of this in encased in a lovely breadcrumb coating making these hard to beat. Add a piece of bacon on the top and you have the finishing touch. If you are serving these as a canape don’t forget the cocktail sticks.
Potato Croquettes
A lovely soft cheesy potato side dish to accompany a main course or add a third of a fried rasher to the top and secure with a cocktail stick.

Ingredients
- 750 g floury potatoes cut into chunks
- 25 g butter
- 2 large eggs plus 2 yolks
- 50 g cheddar
- 50 g plain flour
- 100 g breadcrumbs
- 1 pinch salt to taste
- 1 pinch ground black pepper to taste
- olive oil for drizzling
Instructions
- Simmer the potatoes in lightly salted water for 15 minutes, or until tender. Drain and mash thoroughly, preferably with a ricer.750 g floury potatoes, 25 g butter
- Beat in the butter and 2 egg yolks then finally the cheese and season to taste.
- Cover and leave until firm and cool enough to handle.
- Shape the mixture into 12-15 croquettes.
- Put the flour, whole eggs and breadcrumbs into three separate shallow bowls and beat the eggs. Dip each croquette in the flour, pat off any excess, then coat in the egg before dipping in the breadcrumbs.50 g plain flour, 100 g breadcrumbs, 2 large eggs
- Transfer to a baking tray, then leave to cool to room temperature. Preheat the oven to 200C/180 Fan/Gas 6.
- Drizzle the croquettes with oil and bake for 20 minutes, or until golden-brown.olive oil
