Ingredients
- 1 tbsps olive oil
- 1 cup onion chopped
- 2/3 cup bell pepper finely chopped
- 1 clove garlic chopped
- 1 1/2 lbs eggplant peeled, 1/2" cubes
- 1 lb zucchini unpeeled, 1/2" slices
- 1 tsp basil
- 1 tsp marjoram
- 3 medium tomatoes peeled, 1/4d
- 1/2 tsp Salt
- 1/4 tsp freshly ground black pepper
- 2 tbsp Parmesan cheese grated
Instructions
- Heat the oil in a large skillet and saute the onion, bell pepper, and garlic for 3 to 4 minutes.
- Add all remaining ingredients except the Parmesan cheese, cover, and cook over medium heat, stirring occasionally, for about 10 minutes or until vegetables are tender-crisp.
- Garnish with cheese to serve.
