Ratatouille – Simple version is an old French classic of ratatouille. This recipe works very well with meat dishes but also as a vegetarian dish. Suitable for diabetics. This is a superbly simple dish that carries flavour, body, texture and aroma, the main elements of a recipe. I often use this recipe as a side dish for gammon or cooked ham. It provides the contrast in textures that every meal needs. Also this dish is perfect if you are a vegetarian. For more delicious recipes check out our side dishes category. Recipes including Sautéed Sweet Peppers, Fruit Salsa and Chayote Salad – Ensalada de Chayote are currently the most viewed vegetarian side-dishes.
