Mexican Style Chorizo is simple recipe that is easy to prepare and delightful to consume. It can be used as nibbles or added to a recipe to add big flavour an colour. Also, you can make this in advance and freeze this Chorizo for use later. The cumin, cinnamon and oregano add a subtle but good hit of flavour while the onion and garlic add textures. As with other chorizos, I use Pork as the protein. The difference between Mexican and Spanish chorizos is quite large. Mexican chorizo is normally served raw and needs to be cooked prior to eating. Whilst Spanish chorizo normally contains paprika and is cured and ready for eating.

Ingredients
- 2 lbs ground pork 900 g
- 6 cloves garlic finely chopped
- 1 large onion finely chopped
- 1 tbsp dried oregano 15 ml
- 1 tsp ground cinnamon 5 ml
- 1 tsp ground cumin 5 ml
- salt to taste
