Sharing Nachos is a fact. This Mexican recipe is easy to prepare, visually amazing and a flavour combination second to none. When your all at home, why not treat your selves to these. Served as a main dish this is the best sharing recipe I know. I use cheddar cheese as it melts so well but there are so many you can use. If you want to be braver, then try making your own Guacamole. It is very simple and only takes 10 minutes.

  • Turn on the oven at 220C/ 425F/ Gas Mark 7
  • Place a frying pan over a high heat and add the mince. Using a wooden spoon/spatula breaks up any lumps and stir until all of the mince has browned.
    250 g beef mince
  • Add 1 tablespoon of the Cajun spice mix, or similar and 1 of the sliced jalapeno chillies. Stir in well and remove the pan from the heat.
    1 ½ tsp cajun spice mix, 3 large pickled jalapenos
  • Place a saucepan over a medium heat and add the butter and flour stirring constantly until you have a paste.
    30 g unsalted butter, 3 tbsp plain flour
  • Add the milk slowly and gently and continue to stir thoroughly until the sauce has thickened making sure that there are no clumps of flour.
    300 ml milk
  • Add 200g of the grated cheese and the remaining Cajun spice and stir well. Taste and season accordingly with salt and pepper. Remove from the heat.

  • In a mixing bowl add the tomatoes, red onion, last of the jalapenos and 80% of the chopped coriander and mix well. Add the lime juice and gently combine.

  • If you are making your own guacamole then choose the other recipe otherwise, mash the avocado up with a little red chilli and season.
  • Nearly there. Place the chips over a serving platter, add the Cajun mince and pour the thick cheese sauce over the chips.
    200 g tortilla chips
  • Add the last of the grated cheese and place in the preheated oven for 10 minutes or until the cheese is bubbling and the chips are toasting.
  • When ready, remove from the oven and add the mashed avocado or guacamole, the salsa, last of the chopped coriander and the remaining jalapenos.
    2 large avocados, 1 large lime, 1 bunch cilantro
  • Serve immediately whilst hot and enjoy.
