Tex-Mex Ground Turkey Potato Boats is an amazing Mexican dish that I serve time after time. I have used pre baked potatoes but you will have to account for the additional time in using uncooked but it is well worth the effort. Divine simple food that taste so good everybody loves it. The onion, garlic and tomatoes form the base of a superb sauce. The addition of Turkey and herbs with the reliable spices topped with cheese is always a winner. I serve this as a main dish but could be used as a side dish for bug eaters.

Ingredients
- 2 large potatoes baked
- 1/2 lb ground turkey
- 1/2 cup onion chopped
- 1 clove garlic minced
- 1 can stewed tomatoes 8 oz
- 1 tsp chili powder
- 1/4 tsp dried oregano
- 1/4 tsp cumin
- 1/4 tsp red pepper flakes
- 1/4 tsp Salt
- 1/2 cup Cheddar cheese grated
Instructions
- Slice potatoes in half, lengthwise. Scoop out center of potato to within 1/4-inch of potato skin. Reserve potato for other use.
- Spoon turkey mixture into potato shells and sprinkle with cheese. On 9x13x2-inch roll pan, bake shells in 375 degrees F. oven for 15 minutes or until cheese melts.
