Tex-Mex Ground Turkey Potato Boats is an amazing Mexican dish that I serve time after time. I have used pre baked potatoes but you will have to account for the additional time in using uncooked but it is well worth the effort. Divine simple food that taste so good everybody loves it. The onion, garlic and tomatoes form the base of a superb sauce. The addition of Turkey and herbs with the reliable spices topped with cheese is always a winner. I serve this as a main dish but could be used as a side dish for bug eaters.

  • Slice potatoes in half, lengthwise. Scoop out center of potato to within 1/4-inch of potato skin. Reserve potato for other use.
  • In medium skillet, over medium-high heat, combine turkey, onion, and garlic. Cook 5 minutes or until turkey is no longer pink; drain meat juices if necessary. Add tomatoes, chili powder, oregano, cumin, red pepper flakes and salt. Cook 15 minutes or until most of liquid has evaporated.
  • Spoon turkey mixture into potato shells and sprinkle with cheese. On 9x13x2-inch roll pan, bake shells in 375 degrees F. oven for 15 minutes or until cheese melts.
