Banana French Toast

Banana French Toast is one of my go to recipes when I need a pick up. This is also an ideal way of using up bananas. Making a sauce of the honey and cinnamon and then coating the bananas is amazing. I serve this as a main dish for breakfast and brunch and also as a snack.
Breakfast is often heralded as the most important meal of the day. So what better way to start your morning than with a delicious and indulgent treat? Banana French toast combines classic comfort with a touch of elegance, creating a breakfast experience that’s hard to beat. This dish marries the soft, custardy texture of traditional French toast with the natural sweetness and creamy richness of bananas. Both are all finished with a drizzle of honey and with a hint of cinnamon.
The foundation of this delightful dish is thick white bread. Opt for a loaf that’s sturdy enough to soak up the egg mixture without falling apart. However make sure it’s soft enough to yield to the bite. The bread is dipped in a luscious blend of eggs and milk. This gives it that signature French toast texture but also ensures it’s perfectly moist on the inside. Once cooked it will achieve that beautiful golden-brown crust on the outside.
Bananas play a starring role in this breakfast masterpiece. Their natural sweetness and smooth texture complement the richness of the egg-soaked bread beautifully. When the bananas are cooked, either nestled between slices of bread or caramelised atop the toast, they transform into a gooey, flavourful delight that elevates the entire dish.

  • In a small pan, add the honey and cinnamon and bring to a simmer. Gentle swirl/stir until lovely and golden. This will be the sauce over the toast.
    3 tbsp honey, ½ tsp cinnamon
  • Add the bananas and gently toss to make sure the bananas are fully coated.
    2 medium bananas
  • Crack the egg into a shallow dish and add the milk.
    1 large eggs, 300 ml milk
  • Beat until fully combined.
  • Add the bread, one piece at a time into the mixture and allow to soak for 30 – 60 seconds turning once.
    4 slices white bread
  • Place a frying pan over a medium heat and add the butter.
    2 tbsp butter
  • When the butter has melted, add the coated bread and cook for about 3 minutes before flipping over for a further 3 minutes. The Toast should be golden brown and lovely.
  • Place the cooked French toast (eggy bread) on a warmed plate and place the bananas and sauce over the toast.
  • Serve immediately.
