Cottage Cheese Pancakes are a delicious alternative to the normal ones. I find these one lighter and tastier and they carry the flavours of the toppings better. Serve as a main dish for breakfast and brunch for a brilliant way to start the day. When you add fruit like bananas, strawberries, blueberries and so many more it makes you smile. Add maple syrup then you start grinning!
