A coffee with a kick that never fails to give you a booooooost. Mexican Coffee combines chocolate, cocoa, cinnamon and Tequila to make a perfect adult drink. Served after a meal is a superb conclusion to a dinner. The Tequila gives a lovely warmth that blends with the cocoa and cinnamon. I use a single shot of Tequila per cup but you can reduce or increase per your tastes. I have served these with Biscotti to great success. The Mexican Coffee goes so well with the almond biscuits, they are perfect for dunking or just for a nibble on the side.

Ingredients
- 4 cups hot espresso-style coffee
- 3/4 cup half-and-half cream
- 1/2 cup honey
- 2 Tbs unsweetened cocoa
- 1 tsp ground cinnamon
- 1 shot tequila per cup
- Sweetened whipped cream
- Chocolate shavings
Instructions
- Combine coffee, half-and-half, honey, cocoa and cinnamon in blender and blend 1 minute on high.
- Add the tequila
- Pour into mugs; garnish with whipped cream and chocolate shavings.
