Chilean Salad – Ensalada Chilena is a superbly simple promoting the amazing flavour of tomatoes. It is flattered with herbs, onion and a jalapeno chilli, all of which increases the tomatoes flavour. Serve as a salad or side dish with cold meats for a refreshing meal. The lemon juice acts as a marinade causing the flavours to increase and compliment each other.

  • Slice the tomatoes and arrange them on a serving platter.
    3 large tomatoes
  • Place the onion slices in a colander and rinse them, first under hot tap water, then under cold water.
    1 medium onion
  • Pat dry and arrange on the tomatoes.
  • Drizzle with the olive oil and lemon juice and sprinkle with the remaining ingredients.
    1 large jalapeño pepper, 1/2 cup Extra Virgin olive oil, 2 tbsp lemon juice, 1 tbsp parsley, 1 tbsp cilantro, 1 pinch salt, 1 pinch ground pepper
  • Allow the flavors to combine for 15 minutes and serve at room temperature.
