Caribbean Cuisine is from the Islands east of Central America, North of South America and South of North America. Anyone who has been their will remember two things. The lovely friendly people and the flavours and textures of the food.  Common ingredients include rice, plantains, beans, cassava, cilantro, bell peppers, chickpeas, tomatoes, sweet potatoes and coconut.  Also all of the various meats that are locally available like beef, poultry, pork or fish. Also, a characteristic seasoning for the region is a green herb and oil based marinade.  Ingredients may include garlic, onions, scotch bonnets, celery, green onions, and herbs like cilantro, marjoram, rosemary, tarragon and thyme. This green seasoning is used for a variety of dishes like curries, stews and roasted meats.
