Cheese Tacos – Tacos de Queso are simple tacos but always a winner with the kids. The poblano chilli is dampened by the sour cream so even a delicate person can handle these. Add various salsas for flavour and strengths of chillies. These tacos may not be full of mince and beans but still have flavour, aroma and look stunning. The recipe calls for queso fresco which is an Mexican cheese but Monterey Jack or Cheddar are good substitutes. Serve as a main dish or snack.

Ingredients
- 1 can poblano chiles seeded and chopped
- 3 medium tomatoes peeled, seeded, and chopped
- 1 small onion chopped
- 2 tbsp corn oil
- 4 large radish finely sliced
- 1 crown lettuce
- 1/4 lb Mexican queso fresco Monterey Jack/cheddar
- 12 small corn tortillas warmed
- Sour cream garnish
- Salt
Instructions
- Combine the chiles, tomatoes, onion, salt, and pepper in an electric blender or food process and process until smooth.1 can poblano chiles, 3 medium tomatoes, 1 small onion, Salt
- Heat the oil in a small skillet over moderate heat and cook the Chillie mixture for 5 minutes, stirring frequently.2 tbsp corn oil
- Place some cheese and sauce on each tortilla and fold in half.,1/4 lb Mexican queso fresco, 12 small corn tortillas
