  • Chop the cherry tomatoes into small pieces using a salad knife.
    10 fresh cherry tomatoes
  • Stir the chopped tomatoes together with the chopped spring onions, cucumber, mango and sweetcorn.
    ½ ripe mango, 2 large spring onions, ½ large cucumber, ½ cup sweetcorn
  • Mix in any chopped herbs you want to add, with a teaspoon of olive oil and have a taste.
    1 tsp olive oil, 1 large lemon, ½ bunch coriander
  • Add a squeeze of lemon or a pinch of sugar to taste.
    1 pinch sugar, 1 small lemon
